One of my goals for 2015 is to cook more at home in order to save money and to eat healthier. Also to encourage myself to be less lazy. I've been looking for simple recipes, ones with few ingredients and quick prep times, that taste delicious. I found this shrimp scampi recipe while browsing online. The recipe is easily halved to serve 1, but I feel 12 shrimp is too small a portion for one person and that the original 24 shrimp are more suited for a single serving.
- 24 large frozen shrimp, peeled, deveined
- 1/2 cup spinach leaves, chopped
- 1 tsp. olive oil
- 1 clove garlic
- 1/2 tsp. dried basil
- 3 splashes hot sauce
- Mix all ingredients into a microwave safe bowl. Microwave for 1 minutes. Toss again. Microwave 1 minute and 10 seconds.
